餐飲服務到會形式 六大類別考你心思 Kayley 特約作者 六大類別 餐飲到會其實博大精深，按宴會的主題及規模而可以有不同的模式，以呈現出主人家的心思。例如在過去兩年因為疫情出現，不少宴會都取消了現場的餐飲環節，改為由賓客帶走食物盒。但隨着疫情過去，各式各樣的宴會、商務活又再出現，形形式式的到會服務再活躍於市場。 01 自助餐式服務 一看名字，香港人應不會陌生，這亦是一種最常見的到會服務方式，在琳瑯滿目的宴會桌上擺滿了美食，賓客可以按心水拿取食物，自助餐規模因應活動的大小而有所改變。由於是自助形式，所以擺盤都花盡心思、枱上亦有不少布置，增加視覺效果和食物的吸引力。自助餐食物的類型的限制較少，可以讓賓客盡歡。 自助餐 亦是一向都受到大眾所愛的原因。 Hot Picks from La Casa:西式自助餐 02 酒會接待服務 酒會接待服務一般會出現在產品發布會前，或演講開始前，主辦方會預備一些輕食，並由侍應提供酒水服務。這類形式的到會，食物、飲品大多數同樣是以自助形式，讓賓客在自助餐枱上自取食物。由於賓客多會站立，或遊走於會場相互寒暄，所以食物通常以一口小食（Canapé）為主，可以讓賓客輕易以叉或手拿起來進食，為免弄污衣服，食品基本上是沒有醬汁，當賓客嘗遍各種口味後，也不失儀態。 Hot Picks from La Casa:商務酒會套餐 03 管家服務 /司膳者服務 在雞尾酒會或下午茶時段的婚禮酒會中，一些剛烹調好的小食，會由侍應以「Passaround」形式招呼，即用托盤捧到賓客身旁詢問是否需要，使賓客可以在美食剛出爐的黃金時間內品嚐到。為了避免賓客弄污手指、衣物及場地，所以食品同樣很少有醬汁。而為了保持小食的新鮮度及温度，小食一般會裝在較小的托盤上，讓廚師不斷補充。 管家服務有時會與自助餐形式並用，如有些會把冷盤小食或價錢較便宜的小食放在自助餐桌上，任客人取。而較矜貴的小食則由Passaround形式招呼。 Hot Picks from La Casa:婚禮酒會 04 行動站 自助餐、婚禮或一些隆重的宴會中上會出現一些「食物行動站」，其實就是一些食物枱，而每張枱都會有廚師即席為你烹煮美食、為賓客切割肉扒，或是即席砌甜品，廚師的另類「烹飪藝術」，為宴會提供了樂趣和互動元素之餘，也可以 有效控制食物份量。 Hot Picks from La Casa:西式自助餐 05 上菜式盛宴 /餐盤式服務 一般隆重的High Table Dinner或Sit Down Dinner都會用這種形式，賓客有如進入西餐廳般入席就坐，不過地點改為家中或其他指定的地方。廚師每烹調好一道佳餚後，會用碟分好每個人的份量，並由侍應送到賓客面前。一般會有三至五道菜，包括湯/沙律、主菜及甜品。 Hot Picks from上菜式盛宴 06 分菜服務
